"Incredibly Easy Vegetarian" is a handy, inexpensive vegetarian cookbook packed with generally good recipes that really are simple to make. I am not a vegetarian, but try to eat meat sparingly. This is a good book that's divided up sensibly with separate chapters for small plates, vegetables, pastas, grains, legumes, etc. I am not a fan of tofu, so I can't really pass judgment on the tofu-based dishes in the book, but there are plenty of sensible dishes here that even hardened carnivores will love. I thought most of the small plates were good, especially "Toasted Ravioli with Spicy Red Sauce" and "Spicy Polenta Cheese Bites." Some of the soups are very good, particularly "Brazilian Black Bean Soup" (feel free to use whatever type of hot sauce you wish, the recipe calls for Frank's brand;) likewise in the salad arena the "Waldorf Brown Rice Salad" is a winner (I always use less mayo than called for; adjust for your own taste and calorie goals.) I wasn't blown away by the pasta chapter, but did like the chapter on grains, and really liked the chapter titled "Luscious Legumes" where two of my favorite dishes reside ("Black Bean Vegetarian Chili" and "Lentil Stew over Couscous," although I prefer it over brown rice.)
The spiral binding, format, and photos of finished dishes make this cookbook easy to use, and while some dishes are definitely more complex than others none require you to be an exceptional cook to get good results. As a basic vegetarian cookbook, especially for those new to vegetarian-centered dining I recommend this book as a very good value.
