Despite his European influence, Chef Pol believes that simple techniques best capture the natural falvors and goodness of the ingredients used.  He insists that exquisite cooking is perfectly possible without devoting endless time to preparation, and certainly, does not require the mastery of professional skills.  Gone are the days when heavy and cream laden sauces dominated the kitchen.  Today's person is health conscious and active.  Our cooking must reflect these changes.....
